Pandan Chiffon Cake

This morning task before work is to get the pandan leafs wash and blended. My Philips 4 in one avent blender that we bought when LX just started solid is seeing light again and put into good use. 😂
wash. cut. put into blender and add one cup of water.
use a strainer to get the pandan extract.
Tadah! this is the amount of pure pandan extract I got. Going to use it to bake a healthier version pandan chiffon cake for LX's breakfast tomorrow.

Ingredients bought yesterday. All can be found in ntuc. This cake required the least effort and if I can bake means you can too. I have tried baking a lot of other cakes but it takes up a lot of time/effort and is not 100 percent successful.

What I like about baking this is that there is no need to wash tonnes of bowls and equipments and best part is there is no need for you to sift flour!
You will only need 2 bowls to separate egg yolks and whites.
Add oil, sugar , cake flour and pandan extract to the same bowl and combine everything. I omitted quite a lot of other ingredient like baking powder, colouring and reduce the amount of sugar. So is a healthier version suitable for toddler/kids.

Normally I will just reset the weighing scale to zero after each ingredient is being added. By doing this means there is no need for me to wash so many little cups and what nots. 😂 #lazy
For the other bowl, use a mixer to beat the egg white and gradually add in sugar till stiff peak.
Fold in the egg white into the bowl that we used to combine all the ingredients.

This part is the most tedious, got to try not to allow air to enter. Normally I will just mix in one circular direction until all is being incorporated.

That being said, this is the last step! Next just need to pour into a baking tin and off it goes into the oven.
Bake for 45 minutes at 160 degree.
So is time to go back to work while waiting!
