National Day | Prawn Mee

Thanks to Singapore's birthday yesterday that we have a mid week off day! Isn't it nice to have an off day every Wednesday. πŸ˜‚
Take 1
Take 2
Happy birthday Singapore! πŸ‡ΈπŸ‡¬
started the day with MacDonald breakfast and LX was so happy to receive National Day flag instead of the usual balloon 🎈
Did grocery shopping!

Been a while since I last cook and not wanting to waste the pack of prawn shells from last week's steamboat, I decided to attempt to cook prawn mee soup.

This was what I bought from NTUC. It would be better if there is a wet market nearby, prawn would be much fresher.

It took me quite long just to choose the prawns, cause I was talking to fellow aunties who give me tips in choosing prawns πŸ˜‚
Not easy feat to be auntie ok!

So much knowledge on marketing to learn.

How to know which type of prawns to buy?
How to see if the prawns is fresh?
These are the ingredients that goes in to soup.

Pork ribs bone + pork rib + carrots πŸ₯•
a whole pot of cooked prawn shells.

The recipe said to boil the soup for two hours but we were rushing out to attend a birthday party, we used a slow cooker instead because it is easier for us! No need to monitor.

LX had lots of fun playing with the cousins at the party.

This is her first time play with play doh.

making ice cream pop 🍦

balancing the penguins 🐧

this is quite fun but the kids got a tendency to push everything off the boat. all of them are trying to put the penguin on the boat at the same time even after telling them to do so turn by turn. πŸ˜…
LX waiting patiently and is finally her turn to start first.
We came home to a house filled with prawn mee smell. πŸ˜‚

Blanched all the rest of the ingredients like prawn and organic bee Hoon.
Drained out the soup onto a pot.

Tasted it and was disappointed that it's so bland even thou the smell was so strong and good.

I omitted all the seasoning like rock sugar, fish sauce and salt thinking it was healthier for LX. πŸ˜‚

I ended up portioning out some soup for her and added all the seasoning into ours!!
it tasted so much better with all the seasoning πŸ˜‚

LX finished all the ingredients except for some noodles. Prawn is one of her favourite food.

So much win seeing her enjoying the food!

Simplified lazy recipe!
